Lobster Bisque Linguine — Bice Mare Downtown

The signature dish of Dubai's most romantic Italian restaurant. A rich, coral-coloured bisque — the kind that takes hours to reduce properly — coats flat linguine strands with intensity and depth. Half a lobster crowns the bowl, the shell cracked and pulled so the claw meat slides free with little effort. The combination of the sweet lobster against the slightly acidic bisque is one of Dubai's great pasta moments, amplified by the absurd backdrop of the dancing fountain through the window.
