Kabuli Pulao (also spelled Qabuli Palaw or Kabuli Palaw) is the national dish of Afghanistan โ a slow-cooked rice preparation that is served at weddings, Eid celebrations, Friday family lunches, and whenever something important needs to be marked. The name comes from Kabul, Afghanistan's capital, though the dish is eaten across the entire country.
At its heart: long-grain rice (typically basmati) cooked in richly seasoned lamb or beef broth, topped with slow-caramelised julienned carrots, plump raisins, and sometimes blanched almonds or pistachios. The whole dish is layered and then steamed together โ the rice absorbs everything โ then inverted onto a large platter for the table to share. The lamb is tender enough to eat with your fingers.

Kishmish โ Dar Al Wasl Mall
Kishmish serves Dubai's finest Kabuli Pulao, full stop. It arrives in a hand-painted clay pot, the rice perfectly separated and fragrant, the lamb falling off the bone, the carrots slow-cooked until jammy and sweet. This is a dish made with genuine care and technique โ not just a bulk-cooked rice served from a vat. The portion (AED 65) is sized for sharing two people, though we've seen individuals finish it alone.
Wakha โ Al Barsha
Wakha's Kabuli Pulao is a different beast from Kishmish's โ larger, more rustic, and built for the meat-focused Shinwari style of eating. The rice is drier than some versions, but the lamb is exceptional โ cooked in its own fat and broth until the flavour is concentrated and intense. This is the version that Dubai's Afghan community eats when they want to feel at home. At AED 55, it's extraordinary value.
Afghan Palace โ Oud Metha
Afghan Palace does something no other restaurant in Dubai does: it serves Kabuli Pulao in proper family-style fashion โ a vast platter (AED 110, serves 3โ4) arrived at the table on a raised stand, with sides of yoghurt, chutneys, and fresh salad. If you're introducing Afghani food to others for the first time, this is the experience to do it in. The private dining rooms (bookable for 10โ15 people) make it a spectacular group dinner.
Kabul Darbar โ Deira / International City
Kabul Darbar is the honest working man's version โ no frills, big portions, and priced for Dubai's Afghan working community. The Kabuli Pulao here (AED 38โ45) feeds two people easily and doesn't skip on the raisins or carrots. The lamb isn't as refined as Kishmish, but it's tender and well-seasoned. If you want an authentic community experience and spending under AED 50 a head, Kabul Darbar delivers.
How to Eat Kabuli Pulao Like a Pro

Share it โ this is family food
Kabuli Pulao is designed for sharing. Order one portion between two, then add kebabs and sides. Going solo is acceptable but you might struggle to finish it.
Eat the carrots and raisins with the rice
Don't push the toppings aside โ they're integral. The sweetness of the caramelised carrot against the savoury lamb is the whole point of the dish. Mix them in as you eat.
Order a side of yoghurt
Afghan restaurants almost always offer plain yoghurt as a side (AED 8โ12). Add a spoonful to each bite โ it cuts through the richness beautifully and is completely traditional.
