What Is Plov?

Plov (also spelled Palov or Osh) is the national dish of Uzbekistan and the most important dish in all of Central Asian cuisine. It is a rice pilaf — but calling it that is like calling a Michelin-starred risotto "rice with stuff in it." Plov is cooked in a kazan (a cast-iron cauldron) over wood fire or high gas heat, with the rice slowly absorbing lamb fat, cooking juices from slow-braised meat, sweetness from carrots and raisins, and depth from cumin, coriander, and barberry.

A great Plov has grains that are separate, never clumped; a golden-orange colour from the caramelised carrots; and a flavour that deepens the longer it sits in the kazan. It is simultaneously one of the world's most humble and most magnificent dishes.

How Authentic Plov Is Made

Render the Fat

Authentic Plov begins with melting sheep tail fat in the kazan until it becomes liquid gold. This fat carries flavour throughout the entire dish in a way vegetable oil cannot replicate.

Brown the Onions and Lamb

Onions are charred at the edges, then lamb pieces (bone-in is preferred) are seared until deeply browned. This creates the zirvak — the flavour base.

Add Carrots, Raisins, Spices

Yellow carrots (traditional) or orange carrots are added in long julienne strips. Cumin, coriander, barberries, and dark raisins follow. The zirvak simmers for 30–45 minutes.

Add Rice and Steam

Devzira rice (a red-husked Uzbek variety) is rinsed and layered over the zirvak. The rice steams in the flavoured broth until absorbed, then is mounded into a dome and left to rest.

Serve on a Laghan

The finished Plov is turned out onto a large flat laghan (plate) with the meat and carrots arranged on top. Achichuk salad (sliced tomatoes and raw onions) is served alongside to cut through the richness.

Named for its signature dish, Plov House in JLT takes its Plov seriously. The daily Plov (AED 45) is the standard version — excellent, reliable, properly fatty. But come on Fridays for the Bayram Plov: cooked in a giant outdoor kazan, enriched with quail eggs and chickpeas, and served to whoever shows up. It sells out by 2pm. The Friday Plov is one of the most authentic Uzbek food experiences available in Dubai for around AED 52.
